This was Brett's first Easter. Jenny took him to church at Anderson Mill Road Baptist Church with Angie, Kathi, Eddie, Katie and I. I had to get photos of his first visit to church on his first Easter. He behaved beautifully! And the Easter outfit that Kathi bought him looked so cute on him! I couldn't quit taking photos of him!

After church, we went to Kenny and Anna's for the annual Harris Easter lunch. Delicious as usual! Logan seems to really love Brett and is so good with him. Logan had his Easter basket and his baseball trophy!

Our Week In Myrtle Beach, SC

We went to Myrtle Beach, SC last week and stayed in our RV. Here are some pictures from our week!

Luke & Hannah stayed a couple of nights with us when we first got there. We had such a nice time together. On Sunday night we went to Jimmy Buffet's Margaritaville restaurant at Broadway On The Beach, Myrtle Beach, SC.

Then we took a walk on Broadway and shopped. It was fun!

At Tiki Jim's we saw some great T-shirts and I bought some. The one we bought for Brett is just a peanut graphic. Then I got a black T-shirt for Stan that said, "I'm just a f*%&@g ray of sunshine, aren't I?" (He had a headache all week and didn't feel good.) I bought a black T-shirt for me that says, "I live in my own little world...it's OK, they know me here." Here are some others we saw!

Monday night Stan built us a fire and we sat out by the fire. It was cold enough to wrap up. I finished reading "I Am Murdered" and started reading outloud to Stan. I started Charles Dicken's "The Mystery of Edwin Drood" in preparation to read the latest "Drood" novel that I bought last week.

We had several days of cold wet weather. On the first sunny day we went to Brookgreen Gardens. I will do a separate post on that. But here is Stan taking the Italian Greyhounds for a walk on the beach. It doesn't last for long because the dogs are terrified of the water!

With the cold, wet weather I spent some time at the Lakewood Coffee House. I get a Decaf Caramel Latte and I ask for only about a tsp of the caramel syrup. Just right! They have free wifi (with purchase) so it's a good place to work on my laptop or read.

It's a month with an "r" in it (ApRil) so we went to Nance's at Murrell's Inlet, SC for the oyster roast.

Stan had to open half of my oysters because I couldn't seem to get them open. I have weak hands and something is wrong with my left arm so maybe that was it. At least I was able to feed myself by opening up most of my oysters. But I was thankful for the ones he opened for me.

We ate at Cagney's (N. Myrtle Beach) for supper one night. We were surprised that it wasn't great. It was OK, but not great and not a place we would return to.

Afterwards we relaxed at the only Barnes & Nobles in Myrtle Beach area.

Due to the wet, cold weather the first half of the week and the windy-blow-us-all-away days the latter half of the week, I shopped a lot. I would shop about 3-4 hours and then come back and rest for the afternoon and then we would go out to dinner early. Stan is glad we are back at home so I will stop spending his money!

Stan and I ate at P.F. Chang's on our last night. We had the Sesame encrusted Ahi Tuna steak with Greet tea Soba noodles. Delish! We also had Chang's vegetarian lettuce wraps. Yummmmm!

Chang's Vegetarian Lettuce Wraps

Cooking Sauce
1 tablespoon hoisin sauce
1 tablespoon soy sauce
1 tablespoon dry sherry
2 tablespoons oyster sauce
2 tablespoons water
1 teaspoon sesame oil
1 teaspoon sugar
2 teaspoons cornstarch

1 teaspoon cornstarch
2 teaspoons dry sherry
2 teaspoons soy sauce
1 teaspoon Chinese chili sauce
2 teaspoons water
1 cup baked tofu, diced
2 tablespoons peanut oil or sesame oil, mixed
1 tablespoon sesame oil, mixed
1 teaspoon fresh minced ginger
2 garlic cloves, minced
2 green onions, minced
1/4 large red onion, minced
4 ounces bamboo shoots, diced
4 ounces water chestnuts, diced
1 (8 ounce) package cellophane noodles
1 head iceberg lettuce or 1 bunch green leaf lettuce

Spicy Sauce (Optional)
1 teaspoon rice vinegar
1 teaspoon soy sauce
1 teaspoon dry mustard (e.g., Coleman's)
1 tablespoon water
1 teaspoon Chinese chili sauce

1. Mix the cooking sauce in a bowl and set aside.
2. For the spicy sauce: In small dish, mix the dry mustard and water until smooth. Add remaining ingredients and mix well.
3. In medium bowl, combine sherry, soy sauce, chili sauce, sesame oil, cornstarch, and water. Mix well and stir in tofu. Allow to marinate for 15 minutes.
4. Heat wok or skillet over medium-high heat. Add the mixed oil and stir fry tofu for 2-3 minutes Set aside.
5. Add the ginger, garlic and onion; stir-fry for about a minute. Add bamboo shoots and water chestnuts; stir-fry for another 2 minutes Return tofu to wok/skillet. Add cooking sauce and cook until thickened (about 2 mins).
6. Place prepared cellophane noodles onto a platter. Pour tofu mixture over them and serve with lettuce and spicy sauce.
