Wedding Shower Tea Party Menu

I'm having a Wedding Shower Tea Party for my nephew Luke and his fiance, Hannah. Of course, since it's a girl thang, Luke won't be here! LOL! But here is what I've picked to serve.

Roquefort Grapes
From A scrapbook of me 8 9 08

1 (10 oz) package pecans toasted, ground
1 (8 oz) package cream cheese, softened
1/4 lb Roquefort Cheese
2 Tbsp heavy cream
1 lb seedless grapes washed and dried

In a mixer combine cheeses and cream and beat until smooth. Drop grapes in mixture and coat. Roll in nuts and put on waxed paper lined tray. Chill until ready to serve.

Peach Almond Sandwiches

1 (3 oz) package cream cheese
2 Tbsp brown sugar
3 Tbsp mashed canned peaches
3 Tbsp almonds toasted
2 Tbsp crystalized ginger
Bread rounds

Blend cream cheese and brown sugar. Add other ingredients and mix well. Spread on bread rounds and top with bread rounds.

Cheese and Pickle Sandwiches

Bread, cut crusts off
Dill pickle slices
American cheese slices

Spread bread with mayo and cut each slice into fourths. Place 1 pickle on each bread square and top with a piece of cheese. Broil to melt.

Mayonnaise Muffins

2 cups self-rising flour
1/4 cup mayonnaise
1 cup milk
2-3 Tbsp sugar (to taste)

Combine flour, mayonnaise, milk and sugar. Blend well. Place into greased muffin tins, filling halfway up. Bake at 400F for 15-20 mins. You may add a layer of marmalade, jelly or jam between batter layers before baking.

Cucumber Sandwiches

1 (8 oz) package cream cheese, softened
1 package dry Italian dressing mix
Seasoning salt
Bread rounds

Slice cucumbers. Combine cream cheese and Italian dressing, mixing until smooth. Spread on bread, place cucumber on top and sprinkle some seasoning salt on top.

Baquettes With Green Tomato Relish

Spread cream cheese on baquette crackers and top with a dollop of Green Tomato Relish. I made this relish using my brother-in-law, Ronnie's, green tomatoes.

Gas Lines

Due to Hurricane Ike, people are anticipating gas shortages (the offshore oil rigs were evacuated due to Hurricane Ike so supplies from the gulf will be cut off until they get back and get oil flowing again) and gas hikes. Yesterday, gas was $3.39/gallon when we left for Charlotte that morning. On the way back home that evening, at the same gas station, gas was $3.49/gallon so I filled up again to top off the tank. Then we went out last night and we stopped at a local station to get me some coffee. Here were the lines of people waiting to fill up.
