Fresh Spring Sweet Peas?


2 pound peas or peas pods
4 oz butter
pinch sugar
Cook the peas in boiling salted water, drain and rub through a sieve or put in blender. Return the puree to the pan, add butter and sugar and reheat. This most likely would freeze; I would put it into ice cube trays.


Put 1 Quart (40oz) of stock in saucepan with cupful of empty pea pods
1 tsp. salt
12 white peppercorns
1 sliced onion
½ sliced turnip
½ carrot
Simmer half hour, strain. Melt 1 tbsp. butter; blend in 1 tbsp. flour. When smooth add 1 cup of cold milk and the strained stock. Stir till it boils. Add 1 tbsp. cream and 1 cup (8oz.) cooked green peas.


1 rasher of bacon or bacon scraps, chopped
1oz butter or substitute
8 oz pea pods
1 beef stock cube
3-4 sprigs of mint
Salt & pepper
2 pints (40oz) stock or water (stock drain from cooked peas is ideal)
Extra chopped mint at serve time.

Melt butter, add chopped bacon and pea rods, fry 4 to 5 minutes. Add stock cube, mint sprigs, salt, pepper and stock or water. Bring to the boil and boil 20-30 minutes or until pea pods are tender. Strain, Bring again to boil; serve sprinkled with extra chopped mint. Serves 4 to 6
