Saute for a few minutes:
A good bunch of Swiss Chard (or fresh spinach), rinsed and chopped
1 clove fresh garlic, peeled and chopped
1 bag of cheese tortellini in freezer section of grocery store. It's fresh cheese tortellini that is packaged an in the freezer section. You put it in boiling water as you would any fresh tortellini. Bring to a boil and boil for about 5 mins. Don't let it boil too long because it will get overcooked and start disintegrating. Then drain, run cold water over it. Place in the large bowl with sauteed greens.
1 ham steak, cubed
1 small can of sliced black olives
1 red bell pepper, washed, remove seeds and membrane and chop
1 small sweet onion, peeled and diced
1 jar of marinated mushrooms (found in canned mushroom section of the canned vegetables)
Grated fresh Parmesan cheese (optional)
1/4 cup olive oil
2 Tbsp red wine vinegar
2 tsp fresh rosemary
1/2 tsp sugar
Salt and Pepper to taste
You can adjust these measurements to your taste. You may like it sweeter so add extra sugar. You may like more vinegar or maybe use a Balsamic vinegar. Just play with it. Then pour over the salad and gently mix. I wouldn't skimp on the rosemary, that really makes the taste.
