Melinda's Mexican Nachos
1 pound lean ground beef
1 packet of taco seasoning
1 1/2 cups water
1 cup Minute Rice (white or brown, your choice)
1 can black beans, rinsed and drained
1 can refried beans
1 block of cream cheese
1 24 oz jar of Old El Paso Salsa (hot, medium, or mild, your choice)
1 12oz package of shredded sharp cheddar cheese
1 large bag of Santitas white corn chips
Salad mix or lettuce of your choice
Grape tomatoes or thinly sliced tomato wedges
Preheat oven to 300F.
Brown ground beef in frying pan then add taco seasoning & 1 1/2 cups water.
Let simmer while you prepare other ingredients.
In large baking pan, layer uncooked rice, seasoned meat/water, black beans, refried beans, patty out the cream cheese like play dough to cover top of beans, pour salsa over all.
Place in oven for 30 minutes.
Then turn heat up to 350' for 15 minutes.
Take out and sprinkle shredded chedddar cheese evenly over top.
Turn oven to broil for 15 minutes to melt cheese.
Take out and let cool for about 15 minutes.
Serve over lettuce, add tomatoes and chips.
