Split Pea Soup

It's pouring rain outside and I wanted to make something cozy for supper. I made Split Pea Soup for the first time.


Split Pea Soup

1 bag of dry split peas, rinsed
1 can vegetable broth
1 1/2 quarts water
2 chicken bouillion cubes
1 can Spam, chopped into small cubes
1/2 tsp of garlic powder (or 1 fresh garlic clove)
1 med onion, finely chopped
2 cups fingerling carrots, shredded
Salt & pepper
2 Tbsp finely chopped fresh oregano

Notes:
* You could use some canned chicken broth but then don't use so much water and leave off the chicken bouillion cubes.

* I used some of the water to add to my carrots and shredded them in my Vitamix mixer. You put the washed carrots in the mixer, add enough water to cover and do a quick blend. Don't over blend or you have carrot juice. I then poured the shredded carrots and water into the soup pot and cut down on the water.

* I was out of chicken bouillion cubes and chicken stock. What to do? I had a package of Ramen noodles with the chicken flavoring packet. I used that packet! (I did not add the noodles.)

I placed all ingredients into my crockpot.

Camp Croft Outside Spartanburg, SC During World War II

Again, I got on the Internet yesterday and found a lot of interesting photos of Camp Croft during World War II. It was a training camp named in honor of Major General Edward Croft, a South Carolinian who had served with distinction as an officer in WWI. Activated January 10, 1941. The Camp also served as a prisoner of war (POW) camp. Approximately 250 German POWs were interned at Croft. A lot of it was made into a state park (7,000 acres) when the camp closed down in 1946 or 1947.
