Fall Recipes

Lazy Broad's Smoky Chicken

4 boneless chicken breasts, cut into strips (or thighs)
1-2 teaspoon lapsang souchong tea
3 cups water
1 teaspoon parsley flakes
1 teaspoon garlic salt
1 tablespoon honey
2 tablespoons barbecue sauce
1 teaspoon flour
4 medium carrots, peeled and diced


Boil 3 cups of water, use one cup to steep the tea for 5 minutes. The tea adds a subtle smokey flavor. Add the tea (with the leaves) to a deep skillet with the remaining 2 cups of water. Add parsley, garlic salt, honey, barbecue sauce, and flour to skillet and turn heat on medium. Add chicken and diced carrots. Cover and allow to simmer for 15-20 minutes. Serve over rice.

Baked Potato Salad



4 large new potatoes, washed and cubed

1 medium onion, peeled, chopped

1 1/2 cups Daisy light sour cream

1 Tbsp dill weed

Salt and Pepper to taste



Cook the cubed potatoes by boiling them. Once they are cooked, drain them and run cold water over them to stop the cooking. Add the rest of the ingredients and carefully mix together. Serve.

Dessert


Vanilla ice cream (low fat, sugar free as desired)
Sliced bananas
Post Grapenuts Trail Mix Crunch breakfast cereal


For each serving put a ice cream scoop of vanilla ice cream, top with sliced bananas and sprinkle the breakfast cereal on top.
