Cheap and Nutritional Lunches

You can make and take your lunches and save money. Making your lunch everyday can save you close to $1,000 per year. It adds up. Make sure you have an insulated lunch bag and some re-usable ice blocks.

Monday
Egg salad sandwich (Add a lettuce leaf, or toast your bread. Add ice block to keep it cold.)
Carrots (washed fingerling carrots, or make your own peeled carrot sticks)
Raisins (pre-packaged raisins or raisins poured in small snack bags)
Water (include a cup in your lunch bag and fill up with water from the water cooler)

Egg Salad
2 Boiled eggs
1 1/2 Tbsp mayonnaise
1 1/2 Tbsp sweet pickle relish
Salt & pepper to taste
Servings - 2 sandwiches


Tuesday
Tuna Fish Salad (Add lettuce leaves for a salad and throw in some saltines, or put on toasted bread for a sandwich. Add ice block to keep it cold.)
Cucumber sticks (Wash and peel, cut into sticks, sprinkle with salt)
Apple and peanut butter (Wash, core and wedge, store with a little lemon juice in a snack bag to keep the apples from turning brown. Put peanut butter in separate snack bag with a plastic knife to spread with.)
Tang in a sealed cup

Tuna Fish Salad
1 Small can of tuna in spring water
1/2 Stick of celery minced
2 Tbsp mayonnaise
1 Tbsp sweet pickle relish
Servings - 2 sandwiches


Wednesday
Homemade Pimento Cheese Sandwich (Add ice block to keep it cold.)
Celery sticks
1 Snack pack of pears in light juice
Lemonade

Homemade Pimento Cheese
1 1/2 Cup of shredded cheddar cheese
1 Small jar of red pimentos
2 Tbsp mayonnaise
Servings - 4 sandwiches


Thursday
Tomato soup with beef broth (Sdd some saltine crackers. Put in insulated mug to keep hot or take a bowl to heat in microwave.)
Celery sticks with homemade pimento cheese
1 Apple (washed, cored, wedged, salt sprinkled on it to keep it from turning brown and giving it another taste)
Water

Tomato Soup With Beef Broth
1 Can of tomato soup
1 Can of beef broth
1 Tsp of horseradish

Add the soup and broth together and bring to a boil, add horseradish. Servings - 2 bowls of soup


Friday
Grilled cheese sandwich (Toast the bread, put some cheese slices in snack bag. At lunchtime, put the cheese on toast and microwave just long enough to melt cheese.)
Sliced tomato
1 snack pack of peaches in light syrup
Hot tea in insulated mug or heated in microwave.
