Peach Ice Box Pie

Peach Ice Box Pie

Crust:
1 stick margarine, melted
1 cup self-rising flour
½ cup chopped pecans

Place melted margarine in a 9”x13” dish. Stir in the flour and pecans into the melted margarine. Press in pan and bake 30 minutes at 325F.

Second Layer:
1 (8 oz) package of cream cheese, softened
¾ cup sugar
3 Tbsp Cool Whip

Stir together all and spread on cooled crust.
Third Layer:
2 Tbsp cornstarch
¾ cup sugar
1 cup water
1 small package peach Jell-O

Cook the first 3 ingredients until thick and boiling. Stir in Jell-O and cool.

Fourth Layer:
3-4 cups thinly sliced peaches

Stir into the Jell-O mixture and add over the third layer. Refrigerate and top with Cool Whip if desired.
