Cool Summer Dinner
Mixed greens, washed
Fresh cucumbers, washed, peeled, sliced
Tommy Toe or Grape Tomatoes (or sliced tomatoes)
Sliced fresh celery
Shredded cheddar cheese
Raisins or Cranraisins
Hard boiled egg (optional)
Raspberry Vinaigrette Dressing
1 can Campbells condensed tomato soup
1 can beef broth
Fresh grated horseradish
Add the tomato soup to a saucepan, add the beef broth instead of water. Bring to a slow boil, reduce heat. Add horseradish, stir and serve with crackers. Can be served with a dollop of sour cream on top and or chipped cilantro.
Ice Cream with Chocolate Bananas
Vanilla ice cream (sugar free and/or fat free are options)
Chocolate sauce (sugar free is an option)
Granola on top
