A Summertime Dinner

Grated Carrot Salad

1 1/2 cups clean, peeled, grated fresh carrots
1 Tbsp rice wine vinegar
1 tsp sugar
salt and pepper to taste

Toss the grated carrots in the rice wine vinegar and sugar mixture. Add salt and pepper to taste. Marinate 15-30 mins before serving.

Crockpot Pot Roast

1 envelope of Italian Dressing mix (.7 oz)
3-3 1/2 lbs boneless beef chuck shoulder or bottom round rump roast
2 large onions, peeled and cut in wedges
2 cloves of garlic, peeled
2 red bell peppers, washed, seeded, membranes removed and cut into strips
1/2 cup beef broth
2 zuchinis, washed and cut into pieces
2 1/2 Tbsp cornstarch mixed in 2 Tbsp water
Salt & Pepper to taste

Pat the roast thoroughly with the Italian Dressing mix. Place onions and garlic on the bottom of the crockpot. Put the roast on top. Add bell peppers and broth. Cover and cook. On High means less time, but on Low it means less heat. Add zuchini and cook another 30 minutes. Remove the meat and vegetables. Strain the liquid into a smaller pot. Add the cornstarch mixture and stir in over heat. This thickens it. Cut the roast beef in slices and pour the gravy over it and the vegetables as you serve.

Icy Fruit Cups With Lemonade

4 - medium (2 cups) ripe plums, pitted, sliced 1/4-inch
3 - medium (2 cups) ripe peaches, pitted, sliced 1/4-inch
3 - small (1 cup) ripe apricots, pitted, sliced 1/8-inch
1 - cup seedless green grapes
1 - can (6-ounce) frozen lemonade concentrate, thawed
2 - cups lime-flavored mineral water

In a large bowl, you want to combine plums, peaches, apricots, and grapes. Toss lightly and divide fruit mixture among 6 cups. In a pitcher, you will stir together lemonade and mineral water. Pour over fruit in cups, cover, and freeze 8 hours or overnight.
