Fried Green Tomatoes

Fried Green Tomatoes

Native to Mexico and Central America, it's not clear how tomatoes came to the United States. Thomas Jefferson grew them in the 1780s and credited one of his neighbors with the introduction, but Harriott Pinckney Horry recorded a recipe "To Keep Tomatoes For Winter Use" in 1770. Somewhere along the way, some Southerner couldn't wait on the tomato to ripen and decided to try frying it! Hey, we fry everything else!

Green tomatoes, sliced and let them stand for 15 mins.
cornmeal
salt/pepper
oil

Heat oil in iron frying pan, just a few Tbsps. Mix cornmeal, salt and pepper together in platter. Dredge tomato slices in cornmeal mixture and place in hot oil. Fry about 4-6 minutes per side. Drain on platter lined with paper towels.

Variations: Use egg to coat tomato slices, dredge in cornmeal mixture.
Use flour as a step. Coat tomato slices with egg, dredge in flour, coat again in egg and dredge in cornmeal mixture.
Combine flour, cornmeal, salt, garlic salt, red pepper and black pepper in platter and dredge tomato slices in this mixture.
Use buttermilk instead of egg
Use breadcrumbs instead of cornmeal

Note: Use fried green tomatoes to make a bacon, lettuce, tomato sandwich. Delish!
